Unlike edge grain cutting boards where the board is made from strips of wood placed side by side, in an end grain cutting board, the pieces of wood are arranged vertically, so the end or “grain” of the wood faces upwards.

The end grain design offers a ‘self-healing’ property – the wood fibers around the cut close up after the knife is removed, which helps maintain the board’s smooth surface and prolong its life.
